Below is the recipe I used when I recently made Applesauce cupcakes. APPLE SAUCE CUPCAKES 1 package (18.25 ounces) spice cake mix (I used yellow cake mix) 3 eggs 1 1/4 cups applesauce 1/3 cup vegetable oil 1/2 cup chopped nuts, optional Preheat oven to 350 degrees Line muffin pans with paper liners. Combine cake mix, eggs, applesauce, and oil in a large bowl. Beat for 2 minutes with an electric mixer on medium speed. Stir in nuts. Pour into prepared muffin pans. Bake for 20 to 25 minutes or until cupcake springs back when lightly touched. Makes 18 cupcakes.
