Today, August 24, 2013, is National Peach Pie Day. A pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savoury ingredients. Recipe for Peach Pie pastry for a double-crust 9-inch pie 5 cups fresh peaches, sliced 1 cup sugar 1/3-1/2 cup all-purpose flour 1/4-1/2 teaspoon cinnamon 2 tablespoons butter 2 tablespoons sugar Preheat oven to 425 degrees F. Stir together flour, 1 cup sugar, & cinnamon & set aside. Wash, peel, & slice fresh peaches. Mix together peaches with the combined dry ingredients. Turn into pastry-lined pie pan & dot with butter. Cover with top crust, cut slits in it, seal the edges. Sprinkle top with 2 tablespoons of sugar. Cover the edges with foil to prevent over browning; remove foil for the last 15 minutes of baking. Bake 35 to 45 minutes or until crust is brown & juice begins to bubble through slits in crust. Pie may be frozen for future use.
I like peaches almost every way you can fix them, except in a pie. Not sure why, but I avoid peach pie. oops....sorry for that unintended little rhyme.
