Fried OKRA - Texas style

    I lived in Texas for 15 years. We had a large garden in our back yard.....Many veggies grew in it - -however, OKRA grew like a weed. With all the rain Texas had -- our okra was an A-plus veggie!...I would pickle it, use it in soups and stews, but the favorite was FRIED OKRA !..... So good !

    Clean- wash whole okra - dip in a batter made of flour, a little salt, pepper and whatever other seasoning or spice you like....garlic, red pepper, etc. add beer to make a moderate to stiff batter. Coat okra in batter and fry in FRY-DADDY deep fried until batter is lightly browned and okra is tender.

    This fried okra does not have that slimy type taste or texture to it - - as it has all fried out !

    I have not seen Okra fresh around here too often -- however, at times it will be at a farmers market or specialty type store. I never tried the frozen Okra to fry - -but it might work out o.k.

    I like to fry zucchini that way.

    In the state of Washington, it too grows like a weed.

    People would secretly leave some on others people doorstep.
